Cathy's Ham and dressing

well get a picnic ham.....about 8 or less pounds.
get some heavy duty wrap...
wrap and put in a pan with sides on it like in the store
put the ham in the pan...preheat oven to 300
then put in oven and cook for about 2 hours.
then cut it down to 250 for the night..
put it in the oven at about 11:00pm and cook all night...
take it out around 7am

Dressing
buy you some frozen homemade biscuits...store brand...
get a pack of five or 6 thighs.....boil them for about an hour
chopp med. size onion .... get some poultry seasoning and sage
yes chicken
take about 8 biscuits (cooked)
crumble them up in a bowl and them put your onion and sage and poultry seasoning in on top ....pour some broth off your boiled chicken in on top of all this bread and seasonings.A little bit at a time and let it soak up in the bread .Stir as you pour and mix well......keep on till you get a good texture...not too wet ...you can taste it too make sure its got the right amount of sage in it.
spray pan with pam and then pour the mixture in the pan
put salt and pepper on top...
make the dressing the night before and put in fridge overnight.
cook the next day in oven at three fifty..
cook for about a good hour and 1/2 then take foil off the top and brown it .
the part about the poultry seasoning and sage was wrong.....use one or the other...but not both...my bad
It seems complicated but is fairly easy
If you have all the ingredients its easy....if you get sage use a little then keep tasting after stirring...
same if you use poultry seasoning.....add to taste
poultry seasoning has sage in it.....
thats why you dont use but one or the other...
